Coconut Burfi (Microwave)

During the Navrathri(festive) season, everyone is in the lookout for quick sweets you can whip up in a jiffy with this recipe from Tarla Dalal. You could add some color, but I decided to keep it colorless as it is for offering to Goddess Saraswathi for the Navrathri pooja. As the preparation is completely in the microwave, it will save you a lot of time and energy you would otherwise spend in front of the stove.

Difficulty level: Easy
Preparation time: 5 min
Setting time: 1 hr.

Ingredients
Grated coconut- 1 cup
Ghee- 2 tsp
Milk- 1/4 cup
Sugar- 3 tbsp
Cardamom- 1/4 tsp
Color-optional, a pinch



Mix the grated coconut and ghee well in a microwave safe bowl, and cook for 2 minutes, stirring after 1 minute. Take the bowl out, add in the rest of the ingredients. Mix them thoroughly and cook for another 2 minutes , stirring after 1 minute. Transfer on to a greased dish with 5" diameter and allow to set for 1 hr. Cut into desired shapes and enjoy.

This is a traditional sweet, usually prepared during festivals in North India.

The original recipe from Tarla Dalal makes 10 laddoos, but since I made the kid-size laddoos, I got 12-13 from the same quantity. This is made in the microwave, and is also a quicker and lighter version of the traditional one.

Difficulty level: Easy
Preparation time: 5 min
Cooking time: 4 min + 30 min for cooling
Makes: 12 medium-sized laddoos

Ingredients:


Besan ( chickpea flour): 1 cup, sifted
Ghee: 1/3  cup
Cardamom powder: 1/4 tsp
Powdered sugar: 3/4 cup

In a microwave safe bowl, mix the ghee and the flour well. Microwave on high for 3 min, stirring every 30 sec. Remove the mixture and allow to cool completely.

Add the powdered sugar and cardamom powder and mix well. Shape into balls of your preferred size.








Chocolate Burfi

I have always been fond of burfies. So I decided to make the chocolate burfi. This would be one of the easiest . Just to let you know, the resulting burfi will be soft and gooey, and that is the way I like it. This recipe from www.showmethecurry.com, is made in the microwave.

Difficulty level: Easy
Preparation time: 5 min
Cooking time: 10 min
Setting time: 2-4 hrs
Makes: about 30 pcs

Ingredients:


Instant dry milk(milk powder): 5 cups
Heavy whipping cream: 2 cups(1 pint)
Powdered sugar: 1 1/4 cups
Chocolate chips: 1/2 cup
Unsweetened cocoa powder: 1 tsp

In a deep microwave-safe bowl, mix the dry milk, whipping cream and powdered sugar well. Mix well.
Cook in the microwave for a minute at a time, taking it out and mixing it every time. Mine cooked for 8 min (every microwave is different, so keep a close eye on it). Look for the mixture fluffing and folding in. Stop cooking once the mixture is folding in. Mix again and pour 3/4 of the mixture onto a greased (or lined with waxed paper) baking pan . Spread and level the mixture with a spatula. To the balance of the mixture, add the chocolate chips and cocoa powder while it's still hot. Mix till all the powder is mixed in and the chips have melted. Pour this mixture to form the top layer.

Allow the burfi to set and solidify. Cut into desired shapes. Store in the refrigerator and serve at room temperature.
